On location at Fallbrook Winery for our Vine to Wine episode, we were following Vernon Kindred, Fallbrook Winery’s winemaker, through his paces fermenting and punching down the grape caps. This process is used when wine grapes are cold soaked for their initial fermentation phase. The berries are cleaned, culled, and placed in large container with dry ice and left for several days to slowly release their juice. The winemaker speeds this process along by punching down the grapes, pushing the whole berries with a large paddle to gently squish them. Nan took a try at this work, and of course the conversation turned to spattering grape juice and how Vernon manages to keep his clothes from being ruined. That’s when he told us about this simple technique or removing red wine stains with an application of white wine. Take a listen!
